Ooh this is decadent! The cashew cream takes on a nice sweetness and is a filling addition to the fruit. The fruit choices are endless (strawberries, kiwi, oranges, pineapple). Pick your favourite. Fresh fruit is a natural fertility booster and filled with antioxidants.
Fruit with Vanilla Cashew Cream
yield: 2 servings
prep: 15 minutes, plus 4 hours soaking time

1 cup cashews (raw and unsalted)
1⁄4 cup + 1 Tbsp coconut milk
1⁄2 tsp cinnamon
2 Tbsp maple syrup
1 tsp vanilla extract
1 Tbsp unsweetened shredded coconut 1/2 cup raspberries
1⁄2 cup blackberries
Directions
- In a small bowl soak cashews in purified water (enough water to cover the cashews)
- Set aside bowl and cover.
- Let stand for at least 4 hours or overnight is best
- Discard soaking water from cashews and rinse
- In high speed blender combine until smooth cashews, coconut milk, cinnamon, vanilla
- in small serving bowls layer blueberries and raspberries
- Place a dollop of vanilla cashew cream on the berries and sprinkle with unsweetened coconut
Note: Remaining vanilla cashew cream will last for about 3-4 days in the refrigerator or 6 months in the freezer.
